Countdown to Spring: Day 15 - Chilli prawn recipe


Spice up your spring with Amy Hodge's chilli prawn recipe

The days are getting longer allowing much more time to play, why not refuel on one of our delicious spring recipes.

Chilli prawns

Serves 4

Ingredients:
1-2 fresh or dried red chillies
4 tablespoons of olive oil
3 cloves of garlic
1 pack of king prawns cooked
Salt and pepper
French bread to serve


Method:
1.    Chop the chillies in half, remove the seeds and finely chop. Slice the garlic into small pieces.
2.    Heat the olive oil in a frying pan and add the chillies and garlic. Cook for a couple of minutes but don't allow to brown.
3.    Add the prawns and cook for a few minutes until heated through. (You can use raw king prawns, which are grey in colour. If you use these make sure they have turned pink and are piping hot when cooking them before serving).
4.    Season with salt and pepper and serve on a bed of salad leaves with some French bread to soak up the flavours.
