Countdown to spring: Day 19 - Eton mess recipe


Enjoy the sweet fruits of spring with this easy to make delicious dessert

Serves 4

Ingredients

500g of strawberries
or a pack of frozen mixed fruits and berries defrosted

400ml of
double cream

3 7.5cm big meringue nests, crushed into chunks

1
tablespoon of balsamic vinegar

Directions

1.    Cut
off the green tops from the strawberries and puree half in a blender.
Then chop the other half into small pieces.
2.    Whip the double
cream until it forms stiff peaks and fold in the strawberry/fruit puree
and crushed meringue. Mix in the rest of the fruit and balsamic vinegar.
3.  
 Serve immediately in small dishes.
