Meatballs
Serves 4
Ingredients:
For the meatballs:
250g pork mince
250g beef mince
4 tbsp bread crumbs soaked in 3 tbsp of warm water
1 medium onion chopped finely
1 egg whisked
Plain flour
For the tomato sauce:
2 tablespoons olive oil
1 onion chopped
2 cloves of garlic
1-2 red chillies
6 tomatoes chopped
250ml tomato passata (Smooth tomato sauce)
100ml red wine
Freshly grated parmesan
350g dried pasta
Method:
Put the pork and beef mince in a bowl and mix together well with the bread crumbs, onion and egg. Then shape into small balls and set aside on a plate and dust with a little flour until lightly coated.
Heat the 2 tbsps of olive oil in a large frying pan and add the meatballs. When the meatballs are browned add the onions, garlic and chillies and fry until softened.
Add the tomatoes and cook for 3-4 minutes stirring occasionally, until softened. Add the tomato passata, red wine and season with salt and pepper, then cover and simmer for 45 minutes.
Meanwhile bring a large saucepan of water to the boil. Add the pasta and cook according to the packet instructions.
Drain the pasta and serve in bowls topped with the meatballs and grated parmesan.
